This recipe needs a batch of Easy Mince to get you started.

Ingredients

1 batch Easy Mince1 egg, beaten1 medium kūmara or large potato1 medium carrot, grated1 medium courgette, grated2 Tbsp wholemeal breadcrumbs, toasted

Method

1. Preheat oven to 180°C2. Mix Easy Mince, egg and grated vegetables together.3. Mould into a lightly greased loaf tin and sprinkle breadcrumbs on top.4. Bake for 45 minutes.5. Serve with a side of salad.

Notes

Optional: mushrooms, sweet chilli sauce, pūhā and silverbeet.
